3 Healthy, Delicious Gluten-Free Sourdough Bread Recipe Options
1. Simple Gluten-Free 4-Ingredient Sourdough Bread Recipe
- 420 g gluten-free baking flour
- 200 g gluten-free unfed sourdough starter
- 12 g fine sea salt
- 300 ml bottled water
- Mix the flour, unfed starter, salt, and water with a stand mixer. Keep mixing until all the ingredients combine and the flour has completely dissolved.
- Use your clean hands to knead and shape the dough into small balls. Then, place the dough balls inside a separate bowl lightly coated with oil and flour.
- Cover loosely with plastic or foil then let the dough rise for around 6 to 10 hours. Note that you’ll have to wait a bit longer for the dough to rise if you live in a warm area.
- By this time, your dough should have already doubled in size. If so, then it’s time to refrigerate the dough balls for around 12 hours.
- Preheat the oven to 500 degrees Fahrenheit with the Dutch oven placed in the center rack. This should take about 30 minutes, give or take.
- Meanwhile, take the dough out of the refrigerator and lay them out on parchment paper lightly powdered with flour.
- Next, cover your hands in flour and mold the dough balls into even tighter, smaller balls.
- Slash an X on the top part of the dough balls using a sharp knife.
- Transfer the parchment paper on the Dutch oven, place two ice cubes on the sides, place back in the oven, then close the lid.
- Reduce the heat down to 450 degrees Fahrenheit and bake for around 40 minutes.
- Afterward, reduce the heat further down to 425 degrees, remove the Dutch oven’s lid, then bake for 40 more minutes.
- Check for doneness by inserting a thermometer into the sourdough bread. They should have an internal temperature of no less than 210 degrees Fahrenheit. Also, the bottom should sound hollow when tapped on.
2. Crusty, Dense Gluten-Free Sourdough Bread
- 1 cup sourdough starter
- 1/2 tsp baking soda
- 1 1/2 tsp xanthan gum
- 1 tsp kosher salt
- 2 1/2 cups gluten-free bread flour blend
- 1 Tbsp psyllium husk
- 1 cup water
- 2 Tbsp olive oil
- 1 Tbsp honey
- The first thing you need to do is feed your gluten-free sourdough bread starter the night before you start baking. Set aside and refrigerate.
- The next day, take the starter out and mix with all the other ingredients listed for this gluten-free sourdough bread recipe. For best results, use a stand mixer.
- Whisk the mixture for five to seven minutes while gradually increasing the speed of the mixer from low to high.
- Cover the bowl of dough loosely then let the mixture rest for around four to five hours until it rises. Make sure to use a warm room free of drafts.
- Then, cover the bowl of dough properly and transfer it to the refrigerator. Leave the bowl there overnight.
- The next day, take the dough out and lay flat on a lightly powdered sheet of parchment paper.
- Sprinkle with baking soda and continue kneading until the dough smoothens out.
- Shape the dough into small, smooth balls then transfer each one to a banneton basket lightly powdered with flour as well.
- Cover loosely then allow to rise for two to three hours until they almost double in size.
- Around two hours into the process of letting the dough rise, start preheating the oven 500 degrees Fahrenheit.
- Transfer the risen dough balls onto the parchment paper, slash X marks on top of them, then place inside the hot oven.
- Immediately after placing the dough balls inside, reduce the temperature down to 450 degrees then proceed to bake for 40 minutes.
- Take out from the oven and let the bread rest before serving or storing.

3. 1-Hour Honey Sourdough Gluten-Free Bread Recipe
- 110 g gluten-free active sourdough starter
- 25 g buckwheat flour
- 150 g millet flour
- 100 g sorghum flour
- 175 g brown rice flour
- 3 Tbsp psyllium husk
- 2 cups filtered water
- 10 g sea salt
- 1 Tbsp honey
- Mix the salt and psyllium husk with the different kinds of flour in a medium-sized bowl. Set aside.
- Take the honey, water, and starter then whisk in a medium-sized bowl. Make sure to feed the sourdough starter at least twice before using for this gluten-free sourdough bread recipe.
- Shape the dough of wet ingredients into small, smooth balls and position at the bottom of a clean bowl.
- Cover the bowl loosely then let the dough ferment for around three to five hours in room temperature.
- Next, transfer the dough to a cloth-lined banneton basket lightly dusted with your flour, salt, and psyllium husk mixture.
- Cover with a damp towel then refrigerate for 7 to 12 hours.
- Once you’re ready to bake, preheat the oven to 475 degrees Fahrenheit with the Dutch oven position in the center rack. This should take around an hour.
- After heating the oven, take out the Dutch oven and place the dough balls on it.
- Cover the Dutch oven bake for 60 minutes until the crust turns golden brown. Then, remove the lid and bake for some finishing touches.
- Remove from heat and let cool on a wire rack.
- When using a Dutch oven, remember to bake the bread twice. Once with the lid on and another with the lid off.
- Be careful with what kind of sourdough starter you use. Whether you need an active or unfed starter depends on the recipe you plan to follow.
- Always let the dough rise in warm, draft-free rooms.
